Sweet Potato Skins

So Thanksgiving is over and I don’t know about you but I am eager to get my eating back on track and keep the pumpkin pie out of my mouth but I can’t resist the temptation of wanting something sweet and to have the aroma of something baking in the oven. Sweet potatoes are my go to in our house. I have never met a sweet potato that I didn’t like hahaha! But seriously, sweet potatoes can be baked, roasted, grilled, mashed, pureed or even an added ingredient to recipes to maintain moisture. I mean the possibilities are limitless when it comes to sweet potatoes. Growing up, at every holiday my Aunt Iretta would make candied sweet potatoes (not sure if they were canned or fresh). With every bit of 500 calories per heaping spoon full and although I am not knocking this Holiday tradition, you know the good ole days, when you can eat whatever whenever you want and not be concerned with your annual health assessment, it wasn’t until my adult years that I understood that all the years of not understanding the importance of nutrition had caught up to me and I was one bag of chips away from obesity. I reached out in March 2016 to a personal friend who also is a personal trainer Ahdi Dausqi. Although my diet needed a complete overhaul the one thing he suggested was adding a sweet potato to my daily diet. Hold the phone! All I could think of was my aunt’s sweet bubbling marsh mellow topped cinnamon whipped sweet potato heaven and while my mouth is watering I heard him say and not candied yams a real sweet potato. I responded of course, who would think you could eat that hahaha. So no butter no marsh mellow jeez he meant business, but this was the reality check I needed so for dinner that night I decided to add a baked sweet potato. I wrapped a cleaned sweet potato in foil and baked it. I still have this date written down, you know the date I fell in love with guilt-free sweet potatoes. Ok, Ok get on with the “Sweet” Potato Skin recipe.

Sweet Potato Skins Recipe

4 Whole sweet potatoes cleaned and halved lengthwise

Whole sweet potatoes cleaned
Whole sweet potatoes cleaned

8 ounces softened cream cheese

1 whole jalapeño diced

1 quarter sweet onion diced

4 strips cooked turkey bacon diced

Instructions:

Place sweet potatoes skin side up on non stick pan (I used foil to prevent sticking and for easy clean up)

Brush skin with olive oil back 425 for 40 minutes or until tender

While your sweet potatoes are baking mix softened cream cheese, jalapeno, onion and turkey bacon

When sweet potatoes are done remove the pulp and mix with your above mixture then fill your sweet potato skins with a spoon full (keeping skin side down)

Reduce oven temperature to 400 and bake 20 minutes or until sweet potatoes have started to brown

Remove from oven and allow to cool

You must resist temptation at this point as these bad boys will be piping hot! Once cooled serve alone or as a side with your meal. For me these hit the spot. Sweet-Spicy-Comfort food…can you say yummy! For my husband, he added a scoop of sour cream, to each their own. It’s a win in our house when I can make 1 thing and it’s a hit. I have a passion for making good food, food that is healthy and yet satisfying. Let me know how you enjoy this recipe.

WHAT’S FOR DINNER?

HA isn’t this the million dollar question? I mean two adults working full time, live in a household and one has the responsibility of asking “What’s for dinner?”.  While the other has the responsibility of grocery shopping, meal planning, cooking (praying everyone likes it) then YAY clean up ☺! For years, I tried to keep up with working full-time, keeping the house clean, getting laundry done, keeping the fridge stocked and being a personal chef ☺ ,haha.  I swear if someone can invent an automated clothes folder I would be in heaven, but seriously it’s not easy trying to keep on top of laundry!  This takes serious talent a talent that I admire in any person that can balance all of this plus sport games, school-home work, I mean you deserve a medal. Sometimes, I wait for confetti to go off at the end of my day that says YAYYYY you made it! When I decided to take control of my health this made a huge impact on my household. Literally everything started falling apart because of the one hour a day I was dedicating to myself.  That one hour which would in-turn better all myself. Who wouldn’t want me to be happy right?? Well it’s not that they didn’t want me to be happy but they still wanted to be fed and a folded under shirt that didn’t look like a Kleenex because I pulled it out of the dryer and threw it in a laundry bin. This is when I realized I needed to really make better use of my time, basically creating a schedule. I couldn’t be expected to cook wholesome meals each day, this is just setting me up for failure. Sure, many times, I would have rather texted my husband grab a pizza but then I would end up eating the pizza and the viscous cycle would begin again, with that being said, serving a salad for dinner was perfect for me but only lasted a short while before I found myself making a meal for me and a meal for husband daily. Great, my effort to get healthy has now added more work. This is when my weekly meal prep was born. What a great idea right! On Sundays, I cook a batch of lunches and dinners for my husband and I and BOOM grab in the morning for lunch and off to work or warm up after work. The meals are labeled so chose what you want when you feel hungry and WINNING! Once I had meal prepped in my house I couldn’t help but share with my family and coworkers. It’s great to share ideas of any kind when they can save time and money, but meal prepping also is a great habit that will spoil you. I easily save 15 minutes each morning buy not making sandwiches or putting together a salad and again at dinner another hour, oh and of course best of all cleanup is a sinch! Oh and wait for it…. We all began losing weight….wait what? Let me explain, at least in our house, when you grab something from the grocery store you can’t resist a snack whether that be ice cream, chips a donut, whatever your guilty pleasure is it derails you from your diet. With meal prep, you save yourself the temptation. We have all been there, you know when you just got off work and get a text that says hey babe what’s for dinner? So you put on your superhero cape and speed race up and down the grocery store aisles hoping when you speed around the corner there is not another cart there because this will totally slow down your mission to get in the store find something you can throw together and get out of the store under 10 minutes because well you still have to make dinner, but then as you turn down the next aisle it hits you its Tuesday its Taco Tuesday, tacos it is ☺ No fear I have you covered on this. One of the meals we offer at The LoCal Kitchen is our Chicken Fajita Bowl, this is one of my favorites because the fajita bowl is perfect for me loaded with chicken, peppers, kale, black beans and rice and yet when served with a tortilla is perfect for my husband.
